Mauzac grapes, only harvested by hand, being fully ripe. Those golden grapes are softly pressed and vinified in the old traditional way (“méthode ancestrale”), that is to say without adding any sugar or yeast, a natural fermentation. A few months later starts a second fermentation according to the sun and the phases of the moon, now in the bottle, giving a fresh wine, low in alcohol and deliciously fizzy. Clear yellow robe and a balanced taste starting with notes of ripe grapes and ending with notes of candied apricot and raisins.
